Chef Lee is keen on delivering the highest quality items from the finest producers both locally and abroad. He is dedicated to instilling the idea of fine-dining prep and presentation in restaurant and banquet environments alike. He thrives on challenging the ordinary by masterfully intertwining classic Global dishes with only the most enticing European and Asian flavors he discovered in his many experiences along his culinary way.
In his early years as Lead Line Cook, Chef Brian Lee worked directly under world renowned Executive Chef Azmin Ghahreman in a AAA Five Diamond and Mobil Four Star hotel and Resort Rated environment at the St. Regis Monarch Beach Resort. In a surprising opportunity presented by Master Chef Ghahreman, Lee traveled to Chef’s Garden and Culinary Vegetable Institute in Ohio to prepare a special fundraising dinner, opening up many doors in Chef’s beginning culinary career. He then took a break from the hotel scene and practiced cooking for a private home in Beverly Hills. There he learned how to balance multiple operational duties and became inspired to open up a small Espresso Bar + Café where he was able to manage and develop his own staff, co-own, and, of course, cook for the establishment.
